Miso Soba Noodles with Tempeh

We like to introduce our students to new ingredients and Tempeh is one of those items. So what is it? Tempeh is deep-fried fermented soybeans. The young chefs in our class often say the taste reminds them of popcorn!

This recipe is a delicious way to incorporate rainbow vegetables and to practice making the perfect sauce profile. We’ve served this as a warm dish or chilled, like a yummy noodle salad!
